homemade lollipops

AWESOME!!

you’re gonna need:

1 cup white sugar

1/3 cup karo light syrup

1/3 cup water

to start.

put it all in a pan and bring to boil, no need to stir or mix. 

at 250 degrees add coloring, still no need to stir or mix.  i did about 5 drops of food coloring that i use to dye eggs.

at 300 degrees, remove from heat and add flavoring – use oil based flavoring specifically made for hard candy, not just the stuff you’d use for cakes and baking…  stir this in with something you don’t mind being covered in hard candy – a wooden stirrer stick works just fine.

pour into molds that have a layer of cooking spray on em and have lolli-sticks already in place – the molds need to be the type that can stand heat – i’m not sure any old ones would work, the mixture is 300 degrees and might melt anything not able to stand that kind of heat.  then wait.  don’t touch. walk away for 10 minutes or so.  once they’re hard, they’ll pop out of the molds.  you’ll be very impressed with yourself.  they are awesome.

i’m planning more colors and flavors, they’re so bright and pretty during this dreary time of year… and hey, there’s 3 more snow storms predicted in the next 10 days.  we can use a little more color!
